Bananas + Almond Butter + Eggs

Did you know that it is possible to make a banana bread from bananas, almond butter, and eggs?? Neither did I until I found this recipe and tried it out. It is amazing!! I don’t have access to a muffin tin so I just cooked it in a regular pan. The cook time was a little longer, but nothing too annoying.

I’ve already eaten all of it but I’m hoping to make up another batch today. Have to get to the grocery store to buy some more bananas!

I’ve been sticking to the Whole 30 eating plan for nearly a month. This banana bread one of those things I found on Pinterest while looking around for new recipes.

I’ve like doing the Whole 30 so much that I’m going to be following it semi-permanently. Which means I’ve got to figure out a good meal plan! I definitely figure on having a few “free” days here and there. But I’ve felt so much better, mainly mentally, and I don’t want to go back to how I used to feel.

I surprised myself by how simple it was to transition to a pretty restrictive diet. I just knew that now was the time and that was that. I’ve made sure I have plenty of approved food around and now that I’ve found a few yummy new recipes to try out I don’t expect I’ll be missing my old eating style in the slightest!
